Siberian Sturgeon Caviar
Stugeons found the perfect habitat in the fresh waters of Rio Negro to naturally grow and spawn, kept in large cages immersed in the river. The farm is made up of upstream floating cages located in such a pristine river, giving a “wild raised” caviar.
The roes are extracted at their optimal maturation. To achieve this, each female is carefully selected using ultrasound.
The delicate salting process of these matured caviars allows complex expressions of its fine and long-lasting flavors on the palate.
